Where Gastronomy Begins

Part of our “People of The Chedi” series: a glimpse into the precision, artistry, and dedication that define world-class gastronomy

Before the sun rises over Luštica Bay, the kitchen is already alive. A baker presses dough into shape, a chef sharpens a knife, and the scent of herbs and sea salt drifts through the air.
In our kitchens, food is a way of bringing people, place, and craft together. What happens behind the scenes shapes the entire guest experience and it’s the people who make it all come to life.

Chefs, bakers, and sommeliers move in rhythm, tasting, adjusting, and sharing ideas. Dining here is a conversation between the land, the sea, and the hands that bring them together. Our chefs work with local ingredients and techniques honed over the years and passed quietly from one hand to the next.

The soul of the kitchen belongs to Executive Chef Boris Đurković. Calm and focused, his presence is felt in every dish. For Boris, cooking has always been a lifelong companion, a fascination that started in childhood and grew into a career shaped by curiosity and dedication. Every day in the kitchen is a continuation of that relationship. Watching him work, you see that excellence doesn’t demand noise, but it leaves its mark softly, through precision and care. For anyone who loves creating, learning, or finding meaning in their work, his story is a reminder that a career can be both personal and purposeful, where skill, care, and creativity come together to leave a lasting impression.

In The Chedi kitchens, tradition is interpreted, not copied. Local flavours are refined, not masked. Freshness is a must, balance is essential, and presentation is considered, never flashy. The result is thoughtful, measured cuisine, one that people remember not because it shouts, but because it quietly leaves its mark.

The kitchens at The Chedi are also spaces of growth and discovery. Junior chefs learn through doing, tasting, testing, failing, and trying again, while experienced team members share knowledge, mentor, and explore new ideas together. It’s a culture built on curiosity and respect, where every plate reflects not just a recipe, but the hand, the eye, and the story of the person who made it.

At The Chedi, gastronomy is a living story. It is the story of the sea and land, of ingredients nurtured locally, and of people who care deeply about their craft. Every meal is a chapter in that story, and every guest becomes part of it.

Follow our “People of The Chedi” series to meet the team, explore behind the scenes, and see how curiosity, care, and craft come together to create an unforgettable experience.
