At The Chedi Luštica Bay, every meal begins with a story. It’s a celebration of flavour, creativity, and culture shaped by the rhythm of the Adriatic and the people who bring it to life. At the heart of this story is our Executive Chef, Boris Đurković, whose culinary path has taken him from humble beginnings in Montenegro to the refinement of Michelin-starred kitchens.

Here, in his own words, he shares the roots of his passion, his philosophy, and what this season’s menu brings to the table:

“My journey into the culinary world began in Podgorica, inspired by the aromas of home-cooked meals that stirred a deep sense of curiosity. What started as fascination soon grew into a lifelong passion, leading me through some of the most inspiring kitchens across the region and beyond.

From the beginning, I felt a strong connection to the precision and artistry of fine dining. Training in two Michelin-starred restaurants pushed me to explore new ways of thinking and working, to honour each ingredient for its texture, its origin, and the potential it holds. These experiences continue to shape my style in the kitchen: refined, expressive, and always open to evolution.

Today, as Executive Chef at The Chedi Luštica Bay, I have the privilege of bringing that vision to life. Alongside a talented team, I create menus that reflect the spirit of the Adriatic, combining contemporary techniques with the depth and soul of our regional flavours. Every plate is a balance of tradition and innovation, designed to reflect the seasons and tell a story.

In the future, I aim to keep pushing the boundaries of Adriatic cuisine. Through bold flavour combinations, imaginative textures, and a commitment to excellence, I want every guest to enjoy a dining experience that leaves a lasting impression.
